Subbeni Didi
šSumbok
A short drive away in Bermoik, Subeni Didi grows the turmeric that NÄnglo sources. Her farm is small, but it is carefully maintained through steady, disciplined work throughout the year.

Turmeric is not a crop that can be harvested quickly. It grows underground and takes almost a full year before it is ready. Once the plants mature, the roots are dug out by hand.
The harvested turmeric is then cleaned thoroughly before being boiled. After boiling, the roots are left to cool and are cut into smaller pieces. These pieces are spread out under the sun and dried for several days, sometimes even weeks depending on the weather.
