In Sumbok, BB Daju is someone people trust with almost anything related to food and farming. Over the years, he has become known for the pickles he prepares, recipes that have travelled through families long before they travelled outside the region.

When he prepares a batch of pickle, nothing is rushed. Every ingredient is handled by hand, from cleaning the produce to preparing the spices that go into the jar.

He never uses measuring cups or fixed quantities. Instead, he works from memory and instinct, adjusting flavours based on the batch he is preparing. For him, making pickles is less about exact measurements and more about understanding how ingredients behave.

This pickle is made using lapsi, a fruit that grows on trees in the hills. The fruit is naturally bitter and is usually collected after it falls to the ground. Once collected, it is cleaned, boiled and prepared with spices to create a pickle that carries a balance of sourness, bitterness and spice.
