In Sristi's family, Sabita Sharma, better known as Thulo Aama (like we have always addressed her) has been the person behind the meals during family gatherings in Sumbok. For years, even now, whenever there is a celebration, we would eventually end up in her kitchen.

This Dalley Timur Sauce comes from a recipe she has been making for a very long time. It is not something she measures or writes down. It is something she simply knows how to make from memory.

She grows her own chillies, picking them carefully when they are ripe. The chillies are cleaned and sorted by hand before they go into the cooking pot. The sauce is prepared in small batches so the flavours stay balanced and the heat does not overpower the dish.

The addition of timur gives the sauce its signature citrusy aroma and tingling finish. What makes it special, however, is the way it is made, slowly, in a home kitchen, by someone who has been perfecting it over years of cooking for her family.

 

For us, this sauce is not just another product. It is something we grew up eating at Thulo Aama’s table and is very dear to us. When we started Nānglo, we wanted a piece, very close to our hearts, reach out to the people who also hold dear their memories of childhood through food and kitchens.
