Dalley khursani is one of the most recognised chillies from the Eastern Himalayas. Known for its round shape, bright colour and intense heat, it carries a G.I. tag, meaning it grows best in this specific region and cannot truly be replicated elsewhere.


At our farm in Hee Bermoik, Sumbok, these chillies are grown and cared for by BB Daju and Sristi's family. If something needs to be planted, harvested, fixed or prepared at the farm, chances are BB Daju is already working on it. He has been around the fields for years and understands the rhythm of the land better than most people.



The chillies are harvested by hand when they reach their peak colour and flavour. After harvesting, they are cleaned and spread out under the sun to dry slowly in the mountain air. Once completely dry, they are crushed using a traditional mortar and pestle.
Because they are hand-ground, the flakes are naturally uneven in size. That texture is proof that they have not gone through industrial machines. The flakes are then bottled without additives or preservatives, keeping their colour, aroma and heat exactly as they should be.
